Fresh starts at 4am
Blu is a family-run fish and chip shop and fresh seafood business in Coburg North and Preston. Everything we sell starts at the fish market, long before sunrise.
From the market to your plate
Most mornings, while Coburg is still asleep, Theo is already at the fish market. He's there from 4am, talking to suppliers and choosing the fish that ends up on your plate later that day. And believe it or not, he loves it.
Seafood runs in the family. Theo's dad came to Melbourne from Greece in the 1970s, and in 1977 he and Theo's mum opened their first fish and chip shop together. Theo grew up in a Greek household where fish was always on the table, learning to cook it from his dad.
Years later, Theo and his dad opened a small fresh fish shop just around the corner, learning the trade from the ground up. It grew so fast that people were waiting two hours for their order and eating on the footpath, so we moved to a bigger home on Gaffney St in Coburg North. A few years later, we opened our second Blu on Bell St in Preston.
Blu is still a family business. Theo's wife, his two sisters and his kids all work in the business, and the focus hasn't changed: fresh seafood, cooked properly, and looking after everyone who walks through the door.

What we care about
Fresh every day
Theo buys at the market himself, so the fish counter and the fryer are stocked with the same fresh seafood.
Cooked to order
Nothing waits under a heat lamp. Your fish goes in the fryer when you order it.
